			<content:encoded><![CDATA[<p>This month’s Hot Wing Update (Feb 2011 E-News) was submitted by Monte W. Cross (Winner of our <a href="http://www.gotprocess.com/pocket-pcm/">PocketPCM app</a>)  Investment &amp; Insurance Services Manager for <a href="http://www.hcu.coop/index.php?option=com_content&amp;view=frontpage&amp;Itemid=410">Hutchinson Credit Union</a>.</p>
<p>Although this is not<a href="http://next-element.com/wp-content/uploads/2011/02/HotWings_McKinleyMonte_2011.jpg"><img class="size-full wp-image-3415 alignleft" title="HotWings_McKinleyMonte_2011" src="http://next-element.com/wp-content/uploads/2011/02/HotWings_McKinleyMonte_2011.jpg" alt="" width="180" height="240" /></a> of a person eating wings, this is my daughter McKinley eating her favorite food in the whole world.  Buffalo Wild Wings potato chips.  See, McKinley was born with a genetic disorder called <a href="http://www.ncbi.nlm.nih.gov/pubmedhealth/PMH0002150">PKU</a> which affects her liver.  She is missing an enzyme that takes protein out of her blood stream so she was born a vegetarian.  A PKU diet does not allow for anything high in protein such as meat, milk, wheat products, fish, soy, etc.  Her diet consists of a restricted protein intake.  Just enough to help her grow but not too much to cause damage.  If her protein level gets to high, it could cause brain damage.  Therefore, her intake in minimal everyday.  This picture is from a trip to Wichita to see her PKU specialist.  We always tell her that if we get good news from her doctor, we will &#8220;splurge&#8221; and go by BWW and get her favorite meal for supper.  If you asked her, these potatoes don&#8217;t have the kick or heat to them like wings do, but they taste like nothing you have ever experienced before!  And you can tell by the smile that she thinks her chips taste SOOOOOOO much better than daddy&#8217;s wings he is eating!!!!</p>
<p>She is very proud of the fact that God made her special and that all things were made for a reason and have a purpose in life.</p>
<p>Thank you for sharing Monte, she is cute as a button!</p>
